    Homemade Soft Pretzels & Beer Cheese
    As we get ready to celebrate Oktoberfest, what better way than rolling and shaping up a batch of homemade soft pretzels! This recipe only calls for a 10 min rest time before shaping the dough. A quick dip in a baking soda water bath, a quick bake and you have delicious pretzels in no time. Paired with a delicious dipping beer-cheese, and we are all set for Oktoberfest, tailgating, or any other occasion.  
     
    Please note that things have changed a little bit at the Co-Op Learning Kitchen due to COVID. A single ticket will have one table and a pair ticket will have a table for two. Limited to 7 tables. Space is limited so sign up early before it sells out!
     
    NOTE: (we don’t exactly double all the ingredients, so the ticket price is not double but rather 1.5x)

    Spanish Paella
    Nourishing, vibrant and served without pretension, paella has held a place of honor and practicality in Spanish homes for centuries. From the perfect crusty socarrat to using local seasonal ingredients, this class will have your senses tingling. We will round out the meal with crusty bread, a simple salad and Spanish wine. Bring your take-out containers, there is plenty of food to eat and take some with you!

    Explore Vermonts Backroads via e-bike with our professional tour guide! You'll experince the thrill of an electric powered bike while strolling through valley's and farm lands on the backroads of Vermont. Discover in depth history of local farming and hidden gems know by locals with a sweet treat at the end of your tour!

    Day Trip Series: Woodstock

    Woodstock: a quaint, quintessential New England town. Perfect for the New England experience.
     
    Activity 1: Get Ready for Gorgeous Views at Billings
     
    Parking:
    There’s a large free parking lot that serves both Billings Farm and Marsh-Billings Historical Park across the street.
     
    To do:
    Billings is great at keeping both kids and adults entertained and engaged. Each day the farm has activities to learn more about life on the farm: churning butter, meeting the cows, what’s in the pantry, learning about milking etc.
     
    You can also tour the farm house on the property with state of the art technology for the time it was built, which I found really fascinating!
    See and pet all the farm animals: goats, chickens, horses, and cows.
    Walk the beautiful propery and take in the scenic views.
     
    Activity 2: Soak in the Peacefulness at Marsh Billings
     
    Miles of carriage trails to explore, including a pond tucked away. You can also learn about the previous owners of Billings Farm and tour the mansion. Beautiful and interesting.
     
    Activity 3: Bring a Little Woodstock Home with You
     
    Wander the quaint shops and art galleries. Take a part of Woodstock home with you by shopping at one of their many local shops or art galleries on Main Street.  
     
    Parking
    You can park in the metered parking behind the library, on the green, or behind Mountain Creamery. Sometimes I like to park on the side streets because parking is free and walk a little extra. 
     
    Activity 4: Be Ready for Incredible Views
     
    If you’re feeling adventurous. Hike Mt. Tom. There are multiple trails options to get to the top. Take the Faulker trail takes about 45 min. to get to the top and about a half an hour down or so. Narrows at the end with some steep sections with rocks and railings, but definitely doable for most. You can also try the the trails from Marsh-Billings as well.
      
    Activity 5: Stop by the Stunning Taftsville Covered Bridge
     
    Stop by the Taftsville bridge, take a great photo and maybe a stroll along the back road on the others side. I think it’s called River Rd.
     
    Activity 6: Sample New England at Sugarbush Farms
     
    Continue on the back roads after crossing the Taftsville bridge and follow the signs to Sugarbush Farms, enjoying the beautiful scenery. There you can sample local goods (like cheeses, jams, sauces and more), learn about maple syrup making, pet the animals, and take an great panorama shot of VT countryside.
     
    Places To Eat
    You’ll never go hungry in Woodstock. The hardest part is what to choose!
     
    Lots of wonderful dining options for dinner: Try the Prince and Pauper for an elegant evening meal, Angor Wat for excellent Asian, Melaza Bistro for Caribbean, Worthy Kitchen for a great burger, and Cloudland Farm for magnificent views and local fare.
     
    For lunch try Mountain Creamery for excellent homemade ice cream, Mon Vert CafeSoulfully Good CafeWoodstock Farmers’ Market, and the Village Butcher or Woodstock Country Store for a great sandwich
     
    Willem Lange of NH PBS Hosts Hidden Treasures to the Wild
     
    Jason Berard is the Stewardship Director at the Upper Valley Land Trust. When he's not working, he's exploring. Along the way he discovers some of NH's "hidden treasures" such as the "Skull Mine" and the mystery of the sunken boat at Smith Pond. Host Willem Lange tags along with Jason to experience some of these oddities, himself.

    HIKING CLOSE TO HOME - WRIGHT'S MOUNTAIN, BRADFORD, VERMONT
     
    Wright’s Mountain is the highest point in Bradford and, says the Upper Valley Trails Alliance, offers "a huge variety" of trail experiences. The quickest route to the summit is from the Wright’s Mountain Road Trailhead: From the parking lot follow the main trail to the summit for unparalleled views of the Waits River Valley. If you have more time and are feeling adventurous, extend your hike to visit Devil’s Den, a rocky ravine with a cave. All in all, there are over seven miles of trails in the network, so plenty to explore.
     
    Maybe you will stumble upon a decorated tree in the forest!
